PORTLAND, Ore. - s4story -- Portland, OR – Woodlark Hotel is thrilled to announce the appointment of Mauricio Dimas as Executive Chef, bringing a vibrant culinary vision to its acclaimed outlets, Abigail Hall and signature restaurant Bullard.
A graduate of the Oregon Culinary Institute, Chef Dimas has cultivated a decade-long career rooted in Portland's dining scene. Beginning at Autentica under Chef Oswaldo Bibiano, he advanced from line cook to chef de cuisine, honing techniques that seamlessly blend PNW ingredients with bold, Mexican-inspired flavors. He subsequently held leadership roles at Olympia Provisions, Wilder, Bar Cala, and most recently Kann, where he helped guide the kitchen to #27 on the 2025 North America's 50 Best Restaurants list.
"My culinary philosophy is rooted in minimalism, highlighting every ingredient while embracing the Pacific Northwest's incredible seafood and seasonal produce," said Dimas. "At Abigail Hall, I'm excited to craft vibrant, refined dishes that complement the intimate bar setting, while Bullard will feature bold, robust flavors with a hint of Mexican inspiration. I want guests to feel comforted, delighted, and transported by every bite."

"Some of my earliest memories are watching my dad make tortillas by hand," Dimas added. "That first one off the griddle, simple, warm, perfect, that's the feeling I'm always trying to recreate for guests."
Dimas' menu vision emphasizes sustainability and local partnerships, incorporating ingredients like razor clams, spot prawns, heirloom corn, and epazote. Guests can anticipate more seafood offerings, including crudos, as well as creative twists on classic Pacific Northwest cuisine infused with Mexican influences.
