Jet Cook™, in-vessel mixing, and Recipe Manager maximize performance of kettles new and old
TRAVERSE CITY, Mich. - s4story -- DC Norris North America, the exclusive US and Canadian distributor of DC Norris Group's food processing equipment, outlined the three additions behind its "Supercharge Your Kettle" approach to help food manufacturers get maximum performance from their kettles, new and old.
"It's the ability to take a standard kettle, any kettle, not just one of ours, and meaningfully improve its efficiency with a handful of targeted additions," said Dick Smith, President of DC Norris North America.
Each addition targets a different part of the batch: how fast it heats, how and where it's mixed, and how consistently it's run.
Faster Heating With Jet Cook™
In a traditional steam-jacketed kettle, heat passes through the vessel wall before reaching the product, which slows heat-up and scorches product onto the kettle wall. Jet Cook™ instead injects steam directly into the product through a patented nozzle, where the steam collapses and releases heat.

A standard kettle takes roughly 25 minutes to bring water to a boil. With Jet Cook™, it takes 6 to 8 minutes. Because the nozzle has no moving parts, particulates like vegetables and meat keep their integrity. Jet Cook™ can be retrofitted to almost any kettle of 80 gallons or larger.
Mixing Without Transfers
For complex recipes like soup, in-vessel homogenizers and emulsifiers bring high-shear mixing into the kettle itself, eliminating the need to transfer product to and from a separate mixing vessel.
"It's one piece of equipment to clean. The product never leaves the vessel, so you avoid the product loss that comes with pumping it out and back," Smith said.
Consistency With Recipe Manager
Recipe Manager, DC Norris's recipe management system, guides operators through each step of a recipe. Along the way it records parameters such as weight and ingredient additions, through to confirmation of final yield. It has been part of DC Norris North America's offering for more than a decade.
