NAPLES, Fla. - s4story -- Old Vines at Mercato will cap its Summer Spirits Dinner Series with a night honoring Tequila Ocho on Wednesday, Aug. 12, from 6 to 8 p.m. The series finale invites guests to discover a brand that has redefined how tequila is experienced — one harvest, one estate and one expression at a time.
The evening will feature a curated four-course tasting menu crafted to complement the distinct character of Tequila Ocho across a range of expressions, from blanco to extra añejo. Each course is designed to highlight the spirit's signature flavor profiles, which span bright citrus and floral notes to rich, earthy complexity.
The menu begins with an amuse-bouche before moving into the first course: seared scallops with passionfruit aquachile, avocado, radish and tomato, paired with an Ocho Plato craft cocktail. The second course features pork belly lollipops with sesame, snap pea, scallion and pineapple, accompanied by an Ocho Reposado craft cocktail. The third course showcases dry aged duck breast with date sauce, farro, spring onion and plum, paired with an Ocho Añejo craft cocktail. The evening closes with a dessert course called Chocolate & Smoke: a chocolate pot de crème with grilled pineapple compote, torched meringue, coconut graham crumble and toasted marshmallow ice cream, served alongside Ocho Extra Añejo, poured neat.
